Mediterranean Dip

This dip is easy to put together and is packed with fresh Mediterranean flavours — it’s nice to have in the afternoon on the deck, or if you have some friends drop over.  As ‘entertaining’ season begins (at least for me, being at the lake), it’s nice to have some easy appetizer ideas.  As usual, you can modify this to your taste.

Mediterranean Dip

serves 4-6

1 cup purchased hummus

3/4 cup tzaziki sauce (purchased or homemade – recipe below)

1/4 cup diced pickled sweet banana peppers

1-2 tbsp finely diced red onion

1 small tomato, diced

1/4 cup diced kalamata olives

1/4 cup crumbled feta cheese

1 tbsp chopped parsley

Directions:

Spread hummus in a circle on a 9 or 10 inch round plate or platter.  Spread tzaziki over hummus.  Sprinkle remaining ingredients on top.  Serve with pita crisps or crackers.

Tzaziki 

1 cup greek yogurt

1/3 cup finely diced cucumber

1 tsp freshly squeezed lemon juice

1/2 tsp cumin (optional)

1 clove minced garlic (I omitted it for this application because the hummus is quite garlicky)

Tzaziki – so easy to make your own fresh version, especially with Greek yogurt being so readily available now.

serve with pita crisps or crackers or tortilla chips
